鲜食糯玉米组织含水量高,采收后仍然是一个生命活动极为旺盛的生命体,自然条件下存放会发生一系列的生理生化变化,品质迅速下降,货架寿命期极短.本文通过研究采后生理生化变化,分析内因和外因对采后生理生化的影响,构建一个综合影响的体系,为下一步研究示范高效可行的鲜食糯玉米保鲜技术提供理论依据和参考,最终实现产业增值增效.结果表明,鲜食糯玉米采会出现呼吸高峰,不断的失重;低温下保藏有益宜人的食味延续;采后可溶性糖向淀粉转化的合成代谢仍占主导地位,使糖含量有较大下降;采后直链淀粉、支链淀粉含量在第一天出现峰值,之后直链淀粉变化不大,支链淀粉含量略有下降;水分含量整体呈下降趋势.低温可以减缓水分散失速度,苞叶的存在则可以加速水分的流失.
