时间是食物的挚友,时间也是食物的死敌.为了保存食物,我们虽然已经拥有了多种多样的科技化方式,然而腌腊、风干、糟醉和烟熏等等古老的方法,在保鲜之余,也曾意外地让我们获得了与鲜食截然不同、有时甚至更加醇厚鲜美的味道.时至今日,这些被时间二次制造出来的食物,依然影响着中国人的日常饮食,并且蕴藏着中华民族对于滋味和世道人心的某种特殊的感触.
不管在中餐还是在汉字里,神奇的“味”字,似乎永远都充满了无限的可能性.除了舌之所尝、鼻之所闻,在中国文化里,对于“味道”的感知和定义,既起自于饮食,又超越了饮食.也就是说,能够真真切切地感觉到“味的,不仅是我们的舌头和鼻子,还包括中国人的心.
Time is an intimate friend of food,as well as an mortal enemy.In order to keep food,we already have many technical ways.While ancient ways like preserve in salt,dry in air,rotten in wine and fume by smoke have once provided entirely different taste unexpectedly,sometimes even richer and more delicious,apart from food preservation.Even to this day,those food secondary made by time has still influence daily diet of Chinese,and contains some special feelings to flavour,the way of the world and the heart of human beings held by Chinese people.
Whether in Chinese food or Chinese character,the magical word "wei" seems to be full of possibilities.Except for the taste from tongue,the smell from nose,the perception and definition of "taste" in Chinese culture is originated from food and drink,while surpass them.That is to say,not only our tongue and nose can truly sense the "taste",our Chinese heart also can.
