关于端午节吃粽的来历,说法不一.最广泛、最有影响的说法是对2000年前伟大爱国诗人屈原的纪念.据说把粽子投入江河,让蛟龙蚕食,以免伤损投江而死的屈原.
至于端午民间吃粽的风俗始于何时,已无法考证.西晋征西将军周处撰著的《风上记》上说：“端午进筒粽,一名角黍,以菰叶裹黏米（糯米）.”可见最迟到西晋,端午吃用箬叶裹的糯米粽子已经十分盛行了.有些粽子包成尖角形,故称“角黍”.这与今天一般粽子的形态相似.及至唐、宋时,粽子的花样渐多,宋代祝穆《事文类聚》中载有角粽、锥粽、菱粽、筒粽、秤锤粽、九子粽等,这是就形状而言来命名的.粽子有馅,也似始于宋代.如宋人吴氏《中馈录》中说：“用糯米淘净,夹枣、栗、柿干、银杏、赤豆,以茭叶或箬叶裹之.”到了明、清,粽子的品种更加繁多,形成了各种有特色的流派.清宫里的“奶子粽”最讲究,是以奶酷浸米后煮成.
粽子还有南北风味之别.南方以苏式粽、嘉兴粽和粤式粽最为著名,湖州粽、宁波粽也已久负盛名.苏式粽很讲究配料,制作精细,以猪油夹沙粽为代表；嘉兴粽矮壮长方,像枕头,有火腿粽、八宝粽、鸡肉粽,火腿粽的馅心用两块瘦肉夹一块肥肉,粽子煮熟后,肥肉的油渗入米内,肥而不腻、鲜美可口；粤式粽则以潮州的“双拼”粽闻名,此粽一头用咸料,一头用甜料,一粽两味,故称“双拼”.北方以北京的江米小枣粽最具有特色,它是用小枣和各种果脯作馅心.
