Method
1) Mix breadcrumbs,onions & beef together.Add the seasoning to egg and beat well.Add the egg to the meat mixture.
2) Portion accordingly to weight required and mould to hamburger ball.Lightly cover with flour to prevent sticking when cooking.
3) Sweat onion rings in frying pan until colour is formed.
4) Put the hamburgers on a hot grill,flatten out and cook on both sides for 3 minutes.Place portion of fries in the deep fryer until golden and crisp.
5) Cut burger bun in half and place the bottom half on the plate.Place a slice of cheese,a burger and grilled onion on top.On the other half place a piece of lettuce,slices of tomato and season with salt and pepper.
6) Place a serve of fries with the burger and serve.

Sweet Short Pastry
1) Sift flour and baking powder into bowl,rub in hard butter so that the mixture resembles fine sand.Add the sugar,then the beaten egg and mould together into a loaf shape.
2) Starting from one end,using a palette knife,scrape slices off and form up again.Repeat the process and then refrigerate for 15 minutes before use.
Lemon Meringue Pie
1) Prepare individual flan cases with the sweet short pastry.Bake blind.
2) Blend the starch with the water and place in a stew pan.
3) Add the other ingredients.
4) Cook over a moderate heat until the mixture boils.
5) Pour the filling evenly into the prepared flan cases.
6) Whisk the egg whites in a clean basin.Add half the sugar and bring to a stiff peak.Fold in the remainder of the sugar.
7) Place the meringue in a piping bag with a star tube and cover the top of the flans with piping.Alternately spread the meringue on top with a palette knife.
8) Bake in a hot oven at 200°C until the meringue is set and lightly coloured.
