Welcome to the seasoning workshop in FLSH and thank you very much for visiting our fermentation laboratory.No I’d like to brief my group to you.I’m Lu Caifeng and in charge of fermentation group of food development department.(Pls allow me to give you explanation of our laboratory.)
Here is fermentation BP laboratory; we use this big autoclave to steam material like soybean,broad bean…,after steaming,move to this incubator room for koji making.This room can control temperature and humidity during koji fermentation.

This room is our major laboratory,our mainly projects is strain screening,AAJP and Amoy soy sauce project,pls see the poster ( the project of the soy sauce in Amoy SH),it is a part of our work and it is a synergy project by FDR,FLSH and Amoy.We give technical support to Amoy factory with FDR,and help them to do some lab test for deep research,sometimes we will go to Amoy factory for improvement on site.Of cause in our hard work,we’ve already got some progress in koji starter,in productivity,in sanitation.
About the labo test,we finish some preparation work like material treatment and some basic analyze in this room,and this is koji making room for koji and koji starter making by using incubator,clean bench and some small koji box.And this room is for micros analyze and inoculation test.
In our fermentation team,most of our work is for Amoy,so we hope in our hard work with FDR and Amoy ,Amoy will become No.1 Soy Sauce Company in China.
