蜂蜜是高级营养品和化工原料.近年蜂蜜需求呈增加趋势,但如何鉴定蜂蜜品质成为一大问题.本文以三种紫云英蜂蜜做为实验材料,采用常规鉴定的手段,依据国家标准,从感官、水分含量、花粉鉴定与花粉率计算、淀粉酶值和淀粉粒含量等五个方面,鉴定三种蜂蜜的品质,结果表明：感官上标称产地为宣城的蜂蜜是真品的可能性大；含水量测定中标称产地为宣城和阜阳的蜂蜜是二级产品；花粉率测定中三种蜂蜜皆是合格产品；淀粉酶测定中标称产地为阜阳的蜂蜜是真品的可能性大；淀粉粒测定中标称产地为阜阳的蜂蜜是真品的可能性大.本实验为检测紫云英蜂蜜的质量提供了一些鉴定依据,对鉴定紫云英蜂蜜是否是真品提供了一些辅助依据.

Honey is senior nutrition and chemical raw materials.In recent years, the honey demand assumed the increase tendency, how to identify quality honey has become a major problem.This article does take three kind of astragalus sinicus honey as tests the material, uses the conventional appraisal the method, the basis national standards, from the sense organ, the moisture content, the pollen appraisal and the pollen rate computation, the amylase value and the starch-grains content and so on five aspects, appraises three kind of honey the qualities,
The result indicated that: the senses of the nominal for xuancheng honey is genuine possibility; Water content determination of nominal origin for xuancheng and fuyang honey is level 2 products; Pollen rate determination of three kinds of honey are qualified products; Amylase determination of nominal origin for fuyang honey is the possibility of genuine; Starch grain in the determination of the nominal for fuyang honey is genuine possibility.In this study,the quality of milk vetch honey provides a number of evaluation based on the identification of Chinese milk vetch honey genuine provides a number of auxiliary basis.
